Foodie treats for BBQ meats

At this time of year there’s nothing better than food cooked outdoors on a barbecue so I thought I would share with you some of my tips and recipes for creating a delicious summer meal for your family and friends. Plus, this week I tried something that I never have before - making my own burgers from scratch. The result was some very tasty burgers at a fraction of the price of the gourmet burgers you can buy in the supermarkets. Here’s the ingredients you’ll need: Minced beef (or lamb if you prefer), tomato puree, garlic puree, sliced olives, an egg yolk, dried herbs, salt and pepper.

I thoroughly combined all the ingredients and shaped the flavoured mince into nice chunky burger patties. I’ve seen cheese stuffed burgers on Man V Food, so you could certainly add a chunk of cheese to the centre of your burger patties at this stage. I then cooked them in the oven to start with (to make sure that the centres were cooked, seeing as they are so thick!) and then finished them off on the BBQ for a lovely flame-grilled taste. Serve with a lovely salad and sliced cheese in a lovely soft bun. Is there really anything better?!

Here are a couple of tasty marinades for you to try on your BBQ meats and you can carry on brushing the marinades on while you grill them. A couple of weeks ago, I had a few chicken thighs, drumsticks and wings in the freezer and I had no idea what to do with them to turn them into a tasty dinner. Other than roasting them, I was fresh out of ideas. So I asked hubby to work his magic with a bit of a marinade (he’s such a pro at this!) and he turned them into the tastiest basted chicken I’ve ever eaten. Here’s what he put into the sauce and it was a simple as brushing it onto the meat regularly while it cooked: Dark soy sauce, golden sugar syrup, mixed spice, ground paprika, garlic paste, jemon juice and tomato ketchup.

Another marinade that I have made recently is a traditional BBQ sauce and I love it on ribs – tasty and sticky – yum! … mmm! I looked at a lot of barbecue sauce recipes to see what ingredients I should use and in the end I decided to mix up my own BBQ sauce recipe including tomato ketchup, brown sauce, cinnamon, wholegrain mustard, honey, golden syrup and paprika. I simply mixed all the ingredients together and poured over the ribs and left them to marinade for a few hours before putting them onto the BBQ and cooking with the lid down until the meat is falling off the bone and the ribs get really sticky!
